Yield: 4 servings
2 tbsp coconut butter
1/2 cup short-grain rice
1/4 tsp cardamom or cinnamon
1/4 tsp nutmeg or cinnamon
2 1/2 cups rice milk, soy milk or lite coconut milk
2 to 3 tbsps honey
1 tsp finely grated orange rind
1. Melt the coconut oil over medium heat in a medium saucepan. Stir in the rice and spices and stir to coat the rice.
2. Stir in the milk and honey and bring to a boil. Reduce the heat, cover and simmer, stirring often. Cook until the rice is tender and the liquid is absorbed. Add more milk if needed. This should take about 25 minutes.
3. Stir in the orange rind and serve as is or with fresh berries.
