Yield: 2 large servings
2 cups cherry plums, pitted and quartered
1/4 cup fresh or store bought blueberry and pomegranate juice
1. Place the plums and juice in a medium saucepan and heat over medium-high heat. Once the mixture begins to boil, reduce the heat and simmer for 15 minutes or until the plums have reached the desired consistency. Continuously stir the plums to avoid sticking and, if needed, add more juice.
2. Place the sauce in a blender and blend until smooth. Alternatively, use a fork to mash the plums. Serve on top of ice cream, waffles, yogurt or cheese.
