3 cups cauliflower florets
1/2 pine nuts
1/8 cup fresh lemon juice
1 clove of garlic
1 tbsp olive oil
5 sprigs fresh thyme leaves
Salt and pepper, to taste
1. Boil water in a pot and place the cauliflower in the water. Cook for about 6 minutes or until tender.
2. Place the pine nuts, lemon juice, garlic and oil in a blender and blend until smooth.
3. Drain the cauliflower well and place in the blender. Blend together until smooth.
4. Sprinkle the cauliflower mash with the thyme leaves, salt and pepper and mix well.
