Ingredients

1/4 cup sunflower oil
1/4 cup soy sauce (if avoiding gluten, use gluten-free soy sauce)
1 clove garlic, minced
3 tablespoons dijon honey mustard
salt and pepper, to taste
1 (2 pound) boneless pork loin roast

Cooking Instructions

1. Mix together the oil, soy sauce, garlic, mustard, salt, and pepper in a bowl
2. Pour the pork over the marinade in a baking dish, cover and refrigerate over-night or at least 1 hour before cooking
3. Preheat an oven to 350°F.
4. Place the pork in the preheated oven and cook until pork is no longer pink in the center. This should take 45 to 60 minutes.
