2 cups unsweetened non-GMO soy milk or any other milk substitute
4 tablespoons dairy-free butter (vegan butter is great)
4 garlic cloves, peeled
10 to 12 medium potatoes peeled and chopped
salt and pepper, to taste
1. Steam or boil the potatoes and garlic together until the potatoes are tender. If the potatoes are chopped into small pieces, this may take 15 minutes or less. But, if you are boiling whole potatoes, this can take up to 45 minutes. Keep on testing the density of the potatoes as you boil.
2. Drain the potatoes and garlic and then place the potatoes and garlic in a large mixing bowl.
3. Add the butter and milk substitute and the salt and pepper. Mash by hand or electric mixer. Enjoy!
