Yield: 8-12 servings
1 cup Gluten-Free Pancake mix*
1 cup apple juice
1/2 tsp cider vinegar
1 tsp vegetable oil or coconut oil
Extra oil for frying

1. In a large bowl, place the dry pancake mix.
2. In a separate medium bowl, mix together the apple juice, vinegar and oil. Slowly pour the wet ingredients into the pancake mix and mix well.
3. Melt the extra oil over a medium-hot griddle and pour the batter onto the griddle. Fry the pancake on both sides until it is brown on each side. Top with our Easy Sugar-Free Berry Sauce.
