Yield: 4 servings
1 ripe banana, mashed
1 tbsp lemon juice
1/3 cup vanilla rice milk or hemp milk
1/2 tsp cinnamon
pinch nutmeg
pinch salt
1 tbsp unrefined cane sugar
1 tsp vanilla extract
4 slices oil dairy and gluten, egg & dairy-free bread
1 tbsp coconut oil, or more if needed
fresh fruit, for serving
1. Put the banana, lemon juice, rice milk, spices, salt, sugar and vanilla in a blender and process until smooth. Pour the ingredients into a shallow bowl.
2. Soak the bread in the mixture for about 3 minutes.
3. In a large pan or skillet, heat the coconut oil over medium heat. Once the pan is hot, place the soaked bread on the skillet and turn once golden brown. This should take about 6 minutes. Serve immediately.
