Yield: 6 servings
2 cups water
2 cups unsweetened applesauce
1 1/2 tsps cinnamon
1/4 cup maple syrup
1/2 tsp salt
2 cups gluten-free quick cooking oatmeal
1/2 cup (or more) fresh or dried blueberries (*if using dried blueberries, ensure that they were processed in a peanut-free facility)
1. In a large saucepan, mix together the water, applesauce, cinnamon, maple syrup and salt and bring to a boil.
2. Mix in the oatmeal and cook for about 2 to 4 minutes or until the mixture thickens. Be sure to stir the mixture constantly to avoid burning the bottom. Stir in the blueberries and remove the saucepan from the heat. Let the mixture stand for 5 minutes. Stir once and serve immediately.
